India is known as the land of flavors, and the diversity of her food culture is beyond one’s imagination. Every nook and corner of India tells a story of food. Every such narrative is inspired by the intermingling of indigenous and adventitious culture. One such place with deep-rooted gastronomic tales is none other than the cultural hub of India – Kolkata! Whether Chinese or Mughlai, Kolkata is peppered with anecdotes of the genesis of these blended flavors. It chronicles beguiling accounts of how such flavors invaded, strengthened their roots, and brought forth a fascinating journey that appeals to people even beyond the continent.
Many eateries have contributed to this roller-coaster ride of adding, omitting, and enhancing flavors to make their respective offerings palatable for the inhabitants of this city. Aminia is one such restaurant that has been a part of this rich culinary journey and still hails as one of the prime Mughlai joints of Kolkata. Aminia started its journey in 1929 with a small outlet at Zakaria Street. After witnessing the burgeoning popularity of Mughlai cuisine, it opened its first outlet at Futnani Chamber at New Market on 15th August 1947.
Since the very beginning, this joint has entranced gourmets with its signature dishes like Rezala, Special Mutton Curry, Chaap, and last but not least, Kolkata Biryani. Over the years, these platters surged in popularity and became cult culinary food items, making Aminia what it is today. But here, we bring you the story of some lesser-known recipes that may not match the signature one’s demand-wise but certainly does in flavor and taste.
